Serves 4
8 large flat mushrooms, wiped with damp kitchen paper
50g butter
5 tablespoons olive oil
juice of 1 lemon
2 tablespoons light soy sauce
8 x 1cm thick eye fillet of beef steaks
sea salt and pepper
2 handfuls of micro greens to finish, optional
Heat the oven to 180C. Line a shallow baking tray with baking paper, leaving enough over-hang to make a paper case.
Place mushrooms on the baking paper and dot each with pieces of butter. Mix together 4 tablespoons oil, lemon juice and soy sauce and drizzle over the mushrooms. Enclose in the baking paper and place in the oven to cook for 30 minutes, until tender.
When the mushrooms are nearly cooked, heat a frying pan over a very high heat - smoking. Rub the beef steaks with remaining oil and season with freshly ground pepper. Pan-fry for one minute, turning once. Transfer to a warm plate, season with salt, cover loosely and rest for a further minute.
Serve steaks on buttered noodles with the mushrooms and all their delicious juices. Finish with a few micro greens and serve a green salad separately.
